Mother’s Day Dinner 2015

First Course

Shrimp en Croûte
prawns marinated with parsley and garlic, wrapped in puff pastry and baked, served over a Brussels sprout slaw, finished with a roasted tomato coulis
Burrata Cheese and Prosciutto Plate
fresh Burrata cheese wrapped with prosciutto and plated with cold asparagus, finished with a drizzled of olive oil and shaved parmesan
Duck Raviolis and Marchand de Vin
raviolis filled with a savory mixture of braised duck, herbs, shallots and fresh mozzarella, served in a red wine reduction sauce and finished with shaved Parmesan

Second Course

choice of:

Watercress Vichyssoise
prepared with fresh watercress, potatoes, leeks and herbs, served cold finished with a dollop of crème fraîche and topped with seasoned croutons
Roasted Beets and Blood Orange Salad
salad of wild baby arugula, baby kale, roasted baby beets, blood orange wedges, shaved fennel and roasted hazelnuts tossed in an orange blossom vinaigrette

Third Course

choice of:

Sole Roulade served over an Israeli Couscous Pilaf
filet of petrale sole stuffed with a crab and shrimp mousse, poached in a savory fish broth and plated over an Israeli couscous pilaf with spring peas and fresh mint, finished with a lemon-chive beurre blanc, served with haricot vert
Slow Roasted Angus Prime Rib with Bordelaise Sauce
bone-out Angus Prime Rib slow roasted, plated over a potato galette and finished with a bordelaise sauce, served with a medley of seasonal vegetables
Roasted Quail with a Cornbread & Oyster Mushroom Stuffing
roasted quail stuffed with a savory cornbread, mushroom and sage stuffing, finished with a pink-peppercorn Madeira wine sauce and plated with grilled spring onions, asparagus and sautéed trumpet mushrooms

Fourth Course

Salted Butter Carmel Chocolate Mousse
Pavlova with Lemon Curd and Spring Berry Potpourri
a meringue shell filled with Meyer lemon curd and layered with fresh berries
