Black Angus beef tenderloin seasoned and slow roasted, finished with a périgueux sauce, served with potato rösti, sautéed trumpet mushrooms and steamed asparagus
John Dory over Farro Risotto
John Dory sautéed and plated over farro risotto and finished with a lemon-saffron beurre blanc, served with a medley of seasonal vegetables
Duck Breast aux Morilles
pan-roasted Maple Leaf Farms duck breast served over pommes fondant and finished with a cognac-morel mushroom sauce, served with green beans and roasted carrots
